SPICED AMERICAN BISON

* 3 tbsp. Hi Mountain Chipolte Dip Mix
* 1 tsp. Fresh ground black peppercorns
* 1/2 tsp. Ground allspice
* 2 tsp. Hi Mountain Cajun Cowboy
* 2 tsp. Cumin seed, toasted and ground
* 1/4 c. paprika
* 1 tbsp. Sugar
* 1 tbsp. Salt
* 4 bison tenderloin fillets

Heat grill to medium-high heat. Combine spices and place on a plate or shallow baking dish. Coat both sides of steak in seasoning mixture and shake off excess. Place in grill basket and lower heat. Grill for 4 to 5 minutes each side. Let rest a few minutes before serving.
