CAJUN SMOKED HALF CHICKEN * 2 to 3 half chickens Clean and wash chicken. Pat dry. Lightly oil chicken skin with vegetable oil. Sprinkle with Hi Mountain Cajun Bacon Sprinkle Seasoning and brush lightly with BBQ sauce. Place 2 pieces of mesquite wood in wood box. We recommend starting with 2 small chunks. Place chicken on racks. Close and latch door. Set temperature to 225 F. Smoke-cook for 2 1/2 hours. |
