COWBOY ZUCCHINI RELISH

* 5 cups zucchini, minced
* 1/2 cup pickling salt
* 2 1/2 cups onion, minced
* 1/2 cup celery, diced
* 1 tsp. turmeric
* 1/2 T. celery seed
* 3 cups sugar
* 2 1/2 cups white vinegar
* 1 1/2 T. cornstarch
* 4 T. Hi Mountain Cajun Cowboy, To be added separately.


Prepare zucchini and combine with salt and other prepared vegetables. Allow mixture to stand overnight.
Drain, rinse thoroughly and drain again in colander. Use a bowl to press down on top of vegetable mixture to force out as much liquid as possible. Combine rest of ingredients. Add to vegetables and bring to a rolling boil in enamel pot. Reduce heat and gently boil for 20 minutes. Add Hi Mountain Cajun Cowboy here. Ladle into hot sterilized jars. Water bathe for 15 minutes and seal.

Yields approximately 4 pints.
