HALIBUT
FISH TACOS WITH GUACAMOLE
* 4 fresh halibut steaks or fillets
* extra virgin olive oil for drizzling
* Hi Mountain Gourmet Fish Seasoning
* 1 lime, juiced
* Hi Mountain Guacamole Dip, prepared using yogurt instead
of sour cream
* 1 heart Romaine lettuce, shredded
* 12 soft tortilla shells
Preheat grill to high heat. Drizzle halibut with olive oil to keep
from sticking. Season with Hi Mountain Gourmet Fish Seasoning. Roll
lime on
the counter to get the juices loose. Grill fish 4 to 5 minutes on each
side until opaque. Squeeze lime juice over the fish and remove from
grill. Flake the fish with a fork into large chunks. While the fish
is cooking,
prepare the Guacamole dip. Heat tortilla shells. Pile fish into shells
and cover with Guacamole dip, top with shredded lettuce, fold and eat.
