Hi Mountain Seasonings Chili

2 lbs. of ground meat (beef, antelope, deer, elk)

2 tablespoons Hi Mountain Seasonings Steak seasoning

2 teaspoons Hi Mountain Seasonings Trail Dust seasoning

2 tablespoons of Hi Mountain Garlic Pepper rub

2 large cans of hot chili beans

1 large can of dark red kidney beans

3 cans of Mexican style stewed tomatoes

1jar of Pace Picante sauce medium or hot depending on how hot you like it.

Ground meat in a large skillet seasoned with Hi Mountain steak seasoning, Hi Mountain Trail Dust, Hi Mountain Garlic pepper grillin rub and chili powder.

Put beans, stewed tomatoes and picante sauce in a crock pot, add ground meat and let simmer on low for at least 4 hours and up to 8 on low.

Serve with shredded cheese, sour cream, diced onions, sliced jalapeños and top with Fritos. Serve with hot corn bread with honey and butter.

 

Christmas day beef tenderloin

1 beef tenderloin trimmed

Olive oil

½-3/4 cup Jack Daniels

Hi Mountain Seasonings Original Burger seasoning

Hi Mountain Seasonings Steak

Hi Mountain Seasonings Western Grill N Rub

Wind River Marinade Zesty Western

1 bunch fresh Rosemary

1 bunch fresh Thyme

In a large glass pan, place beef tenderloin, take a fork and pierce all through the meat, cover with olive oil, Jack Daniels and liberally season with the next 6 ingredients, be sure to press the seasonings and herbs into the tenderloin, gently turn the meat over and repeat.

Let marinade for at least two hours and up to overnight. (Make sure meat is at room temperature before searing)

Pre heat oven to 350, cut tenderloin in 1/2

In a large skillet on medium heat, add olive oil and Hi Mountain Western Grill n rub, let it get very hot, sear all 4 sides of each tenderloin. Transfer back the pan the tenderloin was marinating in and put in the oven. With your thermometer, cook to your desired wellness.

This delicious meat pairs well with garlic mashed potatoes, acorn squash (with butter, brown sugar, cinnamon and nutmeg,) and fresh green beans.

A bold Red Zin will complete this meal.

 

Smokey Chex Snack Mix

6 T. butter or margarine

2 T. Worcestershire sauce

1½ tsp. Hi Mtn. Steak Seasoning

¾ tsp. Hi Mtn. Garlic Pepper Rub

½ tsp. Hi Mtn. Buckboard Bean Seasoning

½ tsp. Hi Mtn. Cajun Cowboy ( optional for a little kick)

3 c. corn chex cereal

3 c. rice chex cereal

3 c. wheat chex cereal

1c. nuts

1c.pretzels

1c. cheese it crackers

Heat smoker to 250 degrees, use wood chips of your choice. No water needed for this one.

Melt butter in large roasting pan,

Stir in seasonings

Gradually stir in remaining ingredients until evenly coated.

Bake one hour; stirring every 15 minutes.

Spread out on paper towels to cool.

Store in air tight container.
