We really rinsed it good and let it soak for about 30 minutes in cold water also. We made a mixture of crushed pineapple, brown sugar and English walnuts and applied it liberally over the bird. In exactly 3.5 hours the thermometer reached 165 degrees and we brought it out and had our dinner. I used a small amount of hickory wood for a little smoke. You have got to give this a try... moist and juicy with a flavor all it's own. Joan and I love the flavor...she just keeps picking at it every time she walks by. I took the time to take a few digital photographs for your viewing pleasure. The images are jpg images good enough for your gallery or printing out and just the right size for the Internet if you wish. Since last December we have purchased the oven, vacuum sealer, jerky board, jerky shooter, knife set, meat grinder, Jerky seasonings, fish brines, poultry brines, Buckboard Bacon Cures, breakfast sausage mix, about all of the shake on seasonings you offer, rib rub, bluecheese mix, bean seasoning and I most likely forgot something I'm sure. We have used Trail Dust on everything it's great, the steak seasoning is the best we have tasted. I have cured three Boston Butts so far for bacon and everyone who was lucky enough to get some loved it. It a new adventure every time I cook in the oven. I write everything down so I can repeat the same results every time. We are Okie farmers and I usually try to make beef jerky for my husband and son during harvest because they rarely stop to eat. I have tried several different recipes and this one is a HIT! My son visited with friends last night after they came in from the field and guess what? They all want me to make them jerky. He said they would all buy the meat and pay me to make it if I just would make them all some. LOL I said sure I will but I was not sure where I picked this up and had thrown the box away but kept the instructions. How convenient to have a website and email at my finger tips. I plan to order more seasoning and I guess I will start making jerky for all the "friends" LOL Just wanted to share this and let you know what a hit Hi Mountain Jerky is here in this little rural community in Oklahoma. Thanks, I wanted to write quickly and tell you how happy we are with the jerky smoker/prime rib oven. My husband usually returns everything I buy him for Christmas, but this year I hit the bulls eye with the smoker/oven and the jerky shooter. He has had more fun making jerky. We also threw a couple steaks in there for 10 minutes after searing them on the grill. Mmm Mmm good. Next we are going to venture into prime rib. I think the only thing you are missing is a way to store it outdoors, yet safe from the weather. (We're working on that on ourselves so we can get it out of the garage!) Hi Chris- I've lost track of
the number of orders we've placed with High Mountain Jerky. Have also given info and order blanks to friends who have placed orders. They couldn't resist after having samples of ours! ;-) Thanks for a great 'taste treat'. Two co-workers have ordered and are making jerky ahead in case of Y2K problems on Jan 1st. We discovered you on QVC a long while back - do you still appear on there? We only saw your product that one time - AND have been hooked ever since. We use the cutting board and knife and it's great! Thanks again... Dear Sirs: On September 4, 1999, I mailed my Hi Mountain Jerky Master back to your company for repair. On September 7, 1999, I received a personal phone call from one of your employees and her name was Liz. Liz was very pleasant to speak with and just wanted to personally follow up with me regarding the problem I had with the unit. Liz indicated she would be sending me a new unit and a couple of days later, I received a new unit in the mail. I used the unit this past weekend and it worked wonderfully. Hi MTN: Just a Quickie Note to everyone there, excellent Jerky Makin's. It's the best I've made and/or had. So good I had to go without one weekend. I joined a society that recreates Civil War / Calvary - Indian Battles that meets one weekend a month to "Play Soldier". I brought the goods required of me but also made some jerky too. (Its good to chew on while your "Laying Dead" on the battlefield). I shared a few pieces and then there was none! Word got out to try my jerky and everyone tried it so much, it was all gone by Supper Saturday with the rest of the weekend to go! Now they want to know how to make it themselves, but I was new and wanted to be invited back so naturally I said "Its my own special secret". So now I'm always invited as long as I've got jerky. Some even bring over their own meat for me to make for them. Great stuff people, thanks again. Daniel G. Kelly Dear Mr. Clark: What my wife Priscilla and I liked about your video was the homespun manner of delivery! We were watching real people, not Hollywood Pros! You sure know your trade well, thanks to your dad! We are going to watch the video again after the washing is on the line. Also, we are going to have pencil and paper handy to list the various cuts of meat you instructed on. I will then take the list to our meats in uncut sizes. I believe we have purchased (in duplicate) every item you have on the market. Do you sell the sausage grinder? I already have the Foodsaver machine. I vacuumed my batch of jerky yesterday and let it stay in the refrigerator until this afternoon. I use a hydraytor at 145 degrees for four hours. My next batch will not be stew meat, but prepared in your manner, using the special cutting board. Liz and her partner are two swell looking gals! John Ferrell Hi Dean, I just want to tell you that your products are a BIG hit in my house. a few years back, Hidden Valley came out with a south western ranch dressing that was great. They discontinued the dressing and i haven't been able to find anything close. Well, i'm happy to say i found something better. A little cajun touch in the regular ranch and BINGO.. South western Ranch dressing.. I see you have a blue cheese Dressing. You may want to try your own South western Ranch dressing.
